Garam Masala Smoothie Bowl Feast

What is a smoothie bowl able to do? This feast of a smoothie bowl explores exactly that. Personally, I like having a few fruits before sitting down to a smoothie bowl rather than having a huge smoothie bowl. And once I sit down, I want to have exciting spots in my bowl each one taking me on a different yet connected journey. Considering the short preparation time, a treat like this is definitely worth it once in a while : )

Yields one large portion. Prep time: 15 min

INGREDIENTS

1/2 onion, sliced
1/4 tsp tomato paste
salt
1 1/4 cups (215 g) dried figs
1/2 tbsp Garam Masala
1 3/4 cups water
1 tbsp lemon juice
2 tbsp almonds, roasted and crushed
2 tbsp dried pomegranate (or raisins, with or without seeds)
chilli
5 tbsp carob flour
2 pinches cinnamon
2 pinches pepper
5 apricots, cut into quarters
2 tbsp goji berries
1/2 tsp green tea leaves
4 tbsp balsamic vinegar
1 tsp mustard seeds

METHOD

Stew the onions together with the tomato paste and a little salt. Blend the figs with the water, lemon juice and Garam Masala and put aside. In a small bowl, combine the dried pomegranate with the chilli and put aside. With a fork, mix the carob flour with cinnamon, pepper and some water or plant-based milk until you get a somewhat creamy mass. Place it into a large bowl with the almonds and add the fig smoothie on top. Combine the apricots, goji berries, salt, green tea leaves and two tbsp of the fig smoothie and add it on top of the smoothie bowl. Place the dried pomegranate, chilli and onions next to it. Add the balsamic vinegar with the mustard seed in a corner and enjoy!
