For this dish, I mixed some spices to get a local spice mixture comparable to Garam Masala. Together with the dominant taste of the millet, the rich aroma balance of the spice mixture creates a solid ground for rocket and red cabbage to dance on!
Serves 4. Prep time: 20 min
INGREDIENTS
1 cup millet
½ tbsp local Garam Masala
salt
1 tbsp syrup with orange zest/orange jam
1 leaf of red cabbage, very thinly sliced lengthwise
2 cups rocket
2 sprigs of mint, finely sliced
juice of 1 ½ lemon
4 tbsp roasted peanuts, chopped
4 tbsp raisins
METHOD
Cook the millet in 1 ½ cup of water, Graham Masala, salt for 10 min after roasting them for half a minute with a little water. In the meanwhile, in a small bowl, combine the syrup/jam and the juice of half a lemon. Add the red cabbage into a pan with the jam-lemon-mixture and stew for 1 ½ minutes. Add the raisins on top of the millet and let rest for 5 min. Combine the rocket with the remaining lemon juice, add the millet with the rest of the ingredients and serve. Enjoy : )
